Providence is calling a Food and Nutrition Cook II Room Service (Food and Nutrition, Variable Shift, 1.0 FTE - 40 hours per week) to Providence Alaska Medical Center in Anchorage, Alaska. In this position you will:

  • Ensures work area is properly sanitized before daily production begins. Constantly cleans, sanitizes food areas and equipment including production, service and all appropriate storage areas. Performs proper handwashing before working and at all appropriate times daily.

  • Secures needed food supplies and small equipment and ensures they are properly stored in work area. Daily and consistently organizes, stocks, labels and dates all stored items.

  • Reviews production sheets and follows standardized recipes for production. Cooks all foods to necessary final temperatures. Cooks and bakes food in quantities and batches to assure food prepared is of the highest quality and nutritive value.

  • Follows Hazard Analysis Critical Control Point (HACCP) guidelines for safe food handling to include thawing, prepping, cooking, holding, cooling and reheating foods. Properly document food temperatures during thawing, cooking and holding of foods in the temperature tracks sheets.

  • Prepares individual plates/orders according to customer preferences and within the required time. Sometimes as a room service cook you will be asked to tailor individual items according to special customer and/or patient requests.

  • Holds all hot foods at 140 degrees F or above. Hold all cold foods below 40 at all times.

  • Reheats all foods that do not meet standards for acceptable serving temperature, to at least 165 degrees for 15 seconds. Document any corrective action to prepared food items.

  • This position uses experience and knowledge of proper ala carte cooking techniques to prep and cook food items for patients and visitors as PAMC.

  • Replenishes serving line food as needed throughout the meal period. Takes temperatures of all replenished items before placing on the steam table to ensure that food items meet the appropriate temperatures.

  • Assists in menu planning, implementation, and recipe refinement.

  • Operates food service equipment safely and within OSHA guidelines. Assists with the overall supervision of the department in the event of an emergency or without the presence of call center specialist, expeditor, supervisor or dietary director.

  • This position performs all duties in a manner which promotes team concept and reflects the Sisters of Providence mission and philosophy.

  • Completes initial and annual Competency Plan for assigned job and department.

  • Operates food service equipment safely and within OSHA guidelines.

Qualifications:

Required qualifications for this position include:

  • 2 years experience in quantity food preparation

  • Obtain Municipality Food Handlers Certificate within 30 days of hire

Preferred qualifications for this position include:

  • Specific vocational training
